This One Pot Chicken Fajita Pasta is an easy and flavorful weeknight dinner that can be made in just one pot.

Ingredients

  • 12 ounces pasta (penne or rotini)
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.

  3. Stir in the onion, bell pepper, and garlic, cooking until softened.
