One Pot Lemon Rosemary Dijon Chicken and Butter Toasted Rice Pilaf

This delicious one pot meal features tender chicken infused with lemon, rosemary, and Dijon mustard, served with butter toasted rice pilaf.

Ingredients

  • 4 pieces chicken thighs
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups chicken broth
  • 1 cup rice
  • 1 lemon (zested and juiced)
  • 2 tablespoons butter
  • 2 sprigs fresh rosemary
  • 1 cup peas (optional)

Instructions

  1. Season the chicken thighs with Dijon mustard, salt, and pepper.
  2. In a large pot, heat olive oil over medium heat and brown the chicken on both sides.
  3. Add chicken broth, rice, lemon zest, and juice to the pot.
  4. Bring to a boil, then reduce heat and cover, cooking until rice is tender and chicken is cooked through.
  5. In a separate pan, melt butter and toast the rice before serving.
  6. Stir in peas if desired and garnish with rosemary.

Notes

  • For extra flavor, marinate chicken in Dijon mustard overnight.
  • Can substitute brown rice for white rice; adjust cooking time accordingly.
