- 4 pieces chicken thighs
- 2 tablespoons Dijon mustard
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 cups chicken broth
- 1 cup rice
- 1 lemon (zested and juiced)
- 2 tablespoons butter
- 2 sprigs fresh rosemary
- 1 cup peas (optional)
- Season the chicken thighs with Dijon mustard, salt, and pepper.
- In a large pot, heat olive oil over medium heat and brown the chicken on both sides.
