- 1 cup ditalini pasta
- 4 slices turkey bacon
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- In a large pot, cook turkey bacon over medium heat until crispy. Remove and chop into pieces.
- Add olive oil to the pot and sauté onion, carrots, and celery for about 5 minutes.
- Stir in garlic and cook for 1 minute.
- Add broth, beans, tomatoes, oregano, basil, and season with salt and pepper. Bring to a boil.
- Add ditalini pasta and reduce heat. Simmer until pasta is tender, about 10 minutes.
- Stir in turkey bacon before serving.
Notes
- For a vegetarian option, omit turkey bacon.
