A comforting and nutritious take on the classic pasta e fagioli, featuring turkey bacon for a healthier twist.

Ingredients

  • 1 cup ditalini pasta
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and chop into pieces.
  2. Add olive oil to the pot and sauté onion, carrots, and celery for about 5 minutes.
  3. Stir in garlic and cook for 1 minute.
  4. Add broth, beans, tomatoes, oregano, basil, and season with salt and pepper. Bring to a boil.
  5. Add ditalini pasta and reduce heat. Simmer until pasta is tender, about 10 minutes.
  6. Stir in turkey bacon before serving.

Notes

  • For a vegetarian option, omit turkey bacon.
  • This dish tastes even better the next day, so it’s great for meal prep!
