Ingredients

  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, feta cheese, red onion, and parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or chill in the refrigerator for 30 minutes before serving.
