Pineapple Upside-Down Cheesecake

This Pineapple Upside-Down Cheesecake combines the classic upside-down cake with a creamy cheesecake layer, creating a deliciously indulgent dessert.

  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 2 cans sliced pineapple, drained
  • 1 cup brown sugar
  • 3 packages (8 oz) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/4 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  3. Arrange the pineapple slices over the crust and sprinkle with brown sugar.
  4. In another bowl, beat the cream cheese and granulated sugar until smooth. Add in vanilla and eggs, one at a time, mixing well after each addition. Gradually mix in the flour.
  5. Pour the cream cheese mixture over the pineapple slices.
  6. Bake for 45-50 minutes until the center is set. Let cool before serving.
