Pumpkin Cheese Stuffed Pasta Bolognese Bake

A delightful blend of creamy pumpkin and cheesy goodness, perfectly baked with a meaty Bolognese sauce.

  • 12 ounces pasta shells
  • 1 cup pumpkin puree
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 pound ground beef
  • 2 cups marinara sauce
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta shells according to package instructions; drain and set aside.
  3. In a bowl, mix the pumpkin, ricotta, garlic powder, onion powder, and half of the mozzarella.
  4. Stuff the cooked shells with the pumpkin mixture and place them in a baking dish.
  5. In a skillet, heat olive oil over medium heat, add ground beef, and cook until browned.
  6. Add marinara sauce and basil to the beef, and let simmer for 10 minutes.
  7. Pour the meat sauce over the stuffed shells and sprinkle with remaining mozzarella and Parmesan.
  8. Bake for 25-30 minutes until bubbly and golden.

Notes

  • For a vegetarian option, substitute ground beef with lentils or mushrooms.
  • Feel free to add more spices or veggies as desired.
