Pumpkin Spice Cheesecake Bars (Easy & Creamy)

  • 1 cup graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup pumpkin puree
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, 1/2 cup sugar, and melted butter. Press mixture into the bottom of a greased baking dish.
  3. In a mixing bowl, beat cream cheese until smooth. Add pumpkin puree, 1 cup sugar, eggs, vanilla, and pumpkin pie spice. Mix until well combined.
  4. Pour pumpkin mixture over the crust and spread evenly.
  5. Bake for 30-35 minutes or until set. Allow to cool completely before slicing.
