  • 1 cup canned pumpkin puree

  • 8 ounces cream cheese, softened

  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine flour, sugar, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, whisk together oil, milk, pumpkin puree, and eggs.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fill each muffin cup about two-thirds full with batter.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool completely on a wire rack.
  8. For the frosting, beat together cream cheese, powdered sugar, and vanilla until smooth.
  9. Frost cooled muffins with the cream cheese frosting.
