  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, baking soda, baking powder, salt, and cocoa powder.
  3. In another bowl, mix oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar.
  4. Combine the wet and dry ingredients until just mixed.
  5. Divide the batter evenly between the prepared pans and bake for 25-30 minutes.
  6. Let the cakes cool completely before removing from the pans.
  7. In a separate bowl, beat the cream cheese with powdered sugar and vanilla extract until smooth.
  8. In another bowl, whip the heavy cream until stiff peaks form and fold into the cream cheese mixture.
  9. Once the cakes are cooled, spread a layer of the cream cheese mixture between the layers and on top of the cake.

Notes

  • For an extra touch, add chocolate shavings on top.
