  • 1 cup buttermilk

  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  3. In another bowl, mix the buttermilk, vegetable oil, eggs, cocoa powder, red food coloring, and vanilla extract.
  4. Combine the wet and dry ingredients, and mix until just combined.
  5. Fill each muffin liner about two-thirds full with the batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack.
