  • 1.5 cups vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 8 oz cream cheese
  • 1 cup confectioners’ sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, mix together the flour, sugar, baking soda, salt, and cocoa powder.
  3. In a separate bowl, whisk together the oil, buttermilk, eggs, food coloring, vanilla, and vinegar.
  4. Combine the wet and dry ingredients and mix until smooth.
  5. Divide the batter between the prepared pans and bake for 30-35 minutes.
  6. Let the cakes cool in the pans for 10 minutes before transferring to wire racks.
  7. For the frosting, beat the cream cheese until smooth, then gradually add the confectioners’ sugar and vanilla.
  8. Once the cakes are completely cool, frost the top of one layer, place the second layer on top, and frost the top and sides of the cake.
  9. Decorate as desired and serve.

Notes

  • For added flavor, consider using a splash of almond extract in the batter.
