- 2 pounds ripe tomatoes
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 4 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 4 slices turkey bacon
- 1/4 cup fresh basil, chopped
- Preheat your oven to 400°F (200°C).
- Place the tomatoes, onion, and garlic on a baking sheet. Drizzle with olive oil, salt, and pepper.
- Roast in the oven for about 30 minutes, or until tender and caramelized.
- Transfer the roasted vegetables to a pot and add the vegetable broth. Simmer for 10 minutes.
- Blend the soup until smooth using an immersion blender or a regular blender.
- In a pan, cook the turkey bacon until crispy. Cut into crouton-sized pieces.
- Serve the soup hot, garnished with turkey bacon croutons and fresh basil.
Notes
- For a creamier soup, add a splash of heavy cream before serving.
