Sage Roasted Butternut Squash Soup

  • 1 teaspoon dried sage
  • 1 cup vegetable broth
  • 1/2 cup coconut milk
  • salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed butternut squash with olive oil, sage, salt, and pepper.
  3. Spread the squash on a baking sheet and roast for 25-30 minutes.
  4. In a pot, combine the roasted squash and vegetable broth. Simmer for 10 minutes.
  5. Blend the mixture until smooth, then stir in the coconut milk.
