Ingredients

  • 1 cup shredded cheddar cheese
  • 1 pound breakfast sausage
  • 4 large flour tortillas

Instructions

  1. In a skillet, cook the sausage over medium heat until no longer pink. Drain excess fat.
  2. Whisk the eggs in a bowl and pour into the skillet with the sausage. Cook until eggs are set.
  3. Lay a tortilla flat and place a portion of the sausage and egg mixture in the center. Sprinkle with cheese.
  4. Roll up the tortilla tightly and repeat with remaining tortillas.
  5. Toast each roll-up in the skillet for a few minutes until golden brown.
