Simple Butternut Squash Soup

  • 1 large butternut squash
  • 1 medium onion
  • 2 cloves garlic
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground nutmeg

Instructions

  1. Peel and cube the butternut squash.
  2. Chop the onion and garlic.
  3. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  4. Add the butternut squash and vegetable broth. Bring to a boil, then simmer until the squash is tender.
  5. Puree the soup using an immersion blender or a regular blender.
  6. Stir in coconut milk, salt, pepper, and nutmeg. Heat through and serve.
