Slow Cooker Chicken Curry

An easy and delicious slow cooker chicken curry recipe that brings comfort and flavor to your table.

  • 2 pounds boneless chicken thighs
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • 1 cup peas, frozen
  • 2 tablespoons cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a slow cooker, combine the chicken, onion, garlic, and ginger.
  2. In a small bowl, mix together curry powder, turmeric, and cumin, then sprinkle over the chicken.
  3. Pour in the coconut milk and chicken broth, and stir to combine.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
  5. In the last 30 minutes of cooking, add the peas.
  6. Once done, shred the chicken in the pot and stir in chopped cilantro.
