  • 2 cups shredded chicken
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) diced tomatoes
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 lime, juiced
  • 1 cup tortilla strips
  • 1/2 cup fresh cilantro, chopped

Instructions

  1. In the slow cooker, combine chicken, black beans, corn, diced tomatoes, onion, and garlic.
  2. Pour in chicken broth and add chili powder, cumin, salt, and pepper.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Once cooked, shred the chicken inside the slow cooker using two forks.
  6. Stir in lime juice and adjust seasoning if needed.
  7. Serve with tortilla strips and garnish with fresh cilantro.
