- 1 pound dried beans (mixed varieties)
- 4 pieces turkey bacon, chopped
- 1 cup chicken ham, diced
- 1 large onion, diced
- 2 carrots, sliced
- 3 celery stalks, chopped
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon thyme
- 1 teaspoon black pepper
- 2 bay leaves
- 1 tablespoon olive oil
- Rinse and soak the beans overnight in water.
- In a skillet, cook the turkey bacon until crispy. Remove and set aside.
- In the same skillet, sauté the onion, carrots, celery, and garlic until softened.
- Add the soaked beans, sautéed vegetables, turkey bacon, chicken ham, chicken broth, thyme, black pepper, and bay leaves to the slow cooker.
- Cook on low for 8 hours or high for 4 hours until the beans are tender.
- Remove bay leaves and serve hot.
Notes
- For an added kick, consider adding a dash of hot sauce before serving.
- Leftover soup can be used as a filling for sandwiches or wraps.
