Slow Cooker Ham and Bean Soup

A comforting and hearty slow cooker ham and bean soup featuring turkey bacon and chicken ham for a delicious twist.

Ingredients

  • 1 pound dried beans (mixed varieties)
  • 4 pieces turkey bacon, chopped
  • 1 cup chicken ham, diced
  • 1 large onion, diced
  • 2 carrots, sliced
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon black pepper
  • 2 bay leaves
  • 1 tablespoon olive oil

Instructions

  1. Rinse and soak the beans overnight in water.
  2. In a skillet, cook the turkey bacon until crispy. Remove and set aside.
  3. In the same skillet, sauté the onion, carrots, celery, and garlic until softened.
  4. Add the soaked beans, sautéed vegetables, turkey bacon, chicken ham, chicken broth, thyme, black pepper, and bay leaves to the slow cooker.
  5. Cook on low for 8 hours or high for 4 hours until the beans are tender.
  6. Remove bay leaves and serve hot.

Notes

  • For an added kick, consider adding a dash of hot sauce before serving.
  • Leftover soup can be used as a filling for sandwiches or wraps.
