Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the pumpkin, oils, and sugars until smooth.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, combine the flour, baking soda, baking powder, spices, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fill the muffin cups about 2/3 full with the batter.
  7. Bake for 20-25 minutes until a toothpick comes out clean.
  8. Let them cool for a few minutes in the tin before transferring to a wire rack.
