  • 4 cups carrots, chopped
  • 2 cups pumpkin puree
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 4 cups vegetable broth
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1/2 teaspoon nutmeg
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup heavy cream (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until softened.
  2. Stir in the ginger and spices; cook for another minute.
  3. Add carrots and pumpkin puree, then pour in the vegetable broth.
  4. Bring to a boil, then reduce heat and simmer until carrots are tender.
  5. Use an immersion blender to puree the soup until smooth.
  6. If desired, stir in heavy cream for added richness.

  • For added texture, reserve some diced carrots before pureeing.
