Spicy Chicken Hot and Sour Soup

A flavorful and invigorating soup that combines the bold spices and the tangy flavors of hot and sour soup with tender chicken.

  • 2 cups cooked chicken, shredded
  • 6 cups chicken broth
  • 1 cup mushrooms, sliced
  • 1 cup bamboo shoots, sliced
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon chili paste
  • 1 teaspoon ground black pepper
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons cornstarch, mixed with water
  • 2 green onions, chopped

Instructions

  1. In a large pot, bring chicken broth to a boil.
  2. Add mushrooms, bamboo shoots, garlic, and ginger. Simmer for 10 minutes.
  3. Stir in shredded chicken, soy sauce, rice vinegar, chili paste, and black pepper.
  4. Slowly pour the beaten eggs into the soup while stirring gently.
  5. Add the cornstarch mixture to thicken the soup, stir well.
  6. Remove from heat and garnish with chopped green onions before serving.

Notes

  • Adjust the level of spiciness by adding more or less chili paste according to your preference.
  • This soup can be made ahead of time and stored in the refrigerator for an easy meal later.
