- 2 cups cooked chicken, shredded
- 6 cups chicken broth
- 1 cup mushrooms, sliced
- 1 cup bamboo shoots, sliced
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon chili paste
- 1 teaspoon ground black pepper
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 tablespoons cornstarch, mixed with water
- 2 green onions, chopped
- In a large pot, bring chicken broth to a boil.
- Add mushrooms, bamboo shoots, garlic, and ginger. Simmer for 10 minutes.
- Stir in shredded chicken, soy sauce, rice vinegar, chili paste, and black pepper.
- Slowly pour the beaten eggs into the soup while stirring gently.
- Add the cornstarch mixture to thicken the soup, stir well.
- Remove from heat and garnish with chopped green onions before serving.
Notes
- Adjust the level of spiciness by adding more or less chili paste according to your preference.
