A hearty and nutritious salad combining tender steak and sweet potatoes, perfect for a quick weeknight dinner.

  • 1 pound sirloin steak
  • 2 large sweet potatoes
  • 4 cups mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the steak with salt and pepper, then grill for 6-8 minutes per side or until cooked to your preferred doneness.
  3. While the steak is grilling, peel and cube the sweet potatoes and boil them in salted water until tender, about 10-15 minutes.
  4. Once cooked, drain the sweet potatoes and let them cool.
  5. In a large bowl, combine mixed greens, cherry tomatoes, red onion, and feta cheese.
  6. In a separate bowl, whisk together olive oil and balsamic vinegar, then pour over the salad mixture.
  7. Slice the grilled steak and add it along with the sweet potatoes to the salad. Toss gently to combine.
