Strawberry Cake

  • ½ cup unsalted butter, softened
  • 1 cup whole milk
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, pureed
  • 1 cup heavy cream
  • ¼ cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the vanilla extract and strawberry puree.
  5. In another bowl, whisk together the flour and baking powder.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk.
  7. Pour the batter into prepared cake pans and bake for 25-30 minutes.
  8. Allow the cakes to cool completely before frosting.
  9. Whip the heavy cream with powdered sugar until stiff peaks form.
  10. Frost the cooled cake layers with the whipped cream and decorate with fresh strawberries.
