- 4 patty pan squashes
- 1 pound ground sausage
- 1 cup cooked rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 cup shredded cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat your oven to 375°F (190°C).
- Slice the tops off the patty pan squashes and scoop out the insides.
- In a skillet, cook the sausage, onion, and garlic over medium heat until the sausage is browned.
- Mix in the cooked rice, Italian seasoning, salt, and pepper.
- Stuff the mixture into the hollowed squashes and place them in a baking dish.
