  • 4 patty pan squashes
  • 1 pound ground sausage
  • 1 cup cooked rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 cup shredded cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the patty pan squashes and scoop out the insides.
  3. In a skillet, cook the sausage, onion, and garlic over medium heat until the sausage is browned.
  4. Mix in the cooked rice, Italian seasoning, salt, and pepper.
  5. Stuff the mixture into the hollowed squashes and place them in a baking dish.
  6. Sprinkle cheese on top of each stuffed squash.
  7. Bake in the preheated oven for 25-30 minutes until the squashes are tender.
