Sweet Corn and Black Bean Quinoa Salad

  • 1 cup quinoa
  • 2 cups water
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup sweet corn, frozen or fresh
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water and drain.
  2. In a medium pot, combine the quinoa and water; bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let stand for 5 minutes.
  4. Fluff quinoa with a fork and let cool.
  5. In a large bowl, combine the cooled quinoa, black beans, corn, bell pepper, onion, and cilantro.
  6. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  7. Pour the dressing over the salad and toss to combine.
  8. Serve immediately or chill in the refrigerator before serving.

  • This salad can be made a day in advance for better flavor.
  • Feel free to add avocado or tomatoes for extra freshness.
