  • 2 medium sweet potatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 8 small corn tortillas
  • 1 avocado, sliced
  • 1 cup fresh cilantro, chopped
  • 1/2 lime, juiced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then toss them with olive oil, cumin, and smoked paprika.
  3. Spread the sweet potatoes on a baking sheet and roast in the oven for 20-25 minutes until tender.
  4. In a pan, heat the black beans until warm and season with lime juice.
  5. Warm the corn tortillas in a skillet for a few seconds on each side.
  6. Assemble the tacos by placing sweet potatoes and black beans on the tortillas, then top with avocado and cilantro.
