- 2 medium sweet potatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 tablespoon olive oil
- 8 small corn tortillas
- 1 avocado, sliced
- 1 cup fresh cilantro, chopped
- 1/2 lime, juiced
- Preheat the oven to 400°F (200°C).
- Peel and cube the sweet potatoes, then toss them with olive oil, cumin, and smoked paprika.
- Spread the sweet potatoes on a baking sheet and roast in the oven for 20-25 minutes until tender.
- In a pan, heat the black beans until warm and season with lime juice.
