Sweet Potato Breakfast Hash

  • 4 strips turkey bacon
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add diced sweet potatoes, bell pepper, and onion; cook until sweet potatoes are tender.
  3. Stir in garlic, paprika, salt, and black pepper; cook for another minute.
  4. Push the mixture to one side of the skillet and add turkey bacon; cook until crispy.
  5. Once bacon is cooked, crack eggs into the empty side of the skillet and cover; cook to desired doneness.
  6. Serve the hash topped with the eggs and crispy turkey bacon.
