Sweet Potato Toast with Fried Eggs

Ingredients

  • 2 large sweet potatoes
  • 4 large eggs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika

Instructions

  1. Slice each sweet potato lengthwise into thick slices.
  2. Brush both sides of the sweet potato slices with olive oil and sprinkle with salt and pepper.
  3. Place sweet potato slices on a baking sheet and bake at 400°F for 25 minutes until tender.
  4. Meanwhile, fry the eggs in a skillet over medium heat until the whites are set.
  5. Top each sweet potato slice with a fried egg and sprinkle with paprika before serving.
