- 1 cup creamy peanut butter
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon honey or maple syrup
- 1/2 cup water (to thin the sauce)
- 2 cups mixed vegetables (bell pepper, carrots, broccoli)
- Cook the rice noodles according to package instructions and drain.
