This Thai Peanut Noodles recipe is not only creamy but also incredibly easy to make, perfect for a quick and delicious meal.

Ingredients

  • 8 ounces rice noodles
  • 1 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon honey or maple syrup
  • 1/2 cup water (to thin the sauce)
  • 2 cups mixed vegetables (bell pepper, carrots, broccoli)

Instructions

  1. Cook the rice noodles according to package instructions and drain.
  2. In a large bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, garlic, ginger, and honey until smooth.
  3. Add water a little at a time to reach desired consistency.
  4. Toss the cooked noodles with the sauce until evenly coated.
  5. Add mixed vegetables and toss to combine.
  6. Serve warm or cold, garnished with chopped peanuts and green onions.

Notes

  • For extra spice, add red pepper flakes to the sauce.
