  • 2 packages (8 ounces each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually add in the sugar, mixing until well combined.
  4. Add the eggs one at a time, mixing thoroughly after each addition.
  5. Stir in the lemon juice, lemon zest, and vanilla extract until just combined.
  6. Pour the cheesecake batter over the crust in the springform pan.
