  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix crushed graham crackers and melted butter until well combined.
  3. Press the mixture into the bottom of a 9-inch springform pan to create the crust.
  4. In another bowl, beat the cream cheese and sugar until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in lemon juice, lemon zest, and vanilla extract until well combined.
  7. Pour the cream cheese mixture over the crust in the springform pan.
  8. Bake for 50 minutes or until the center is set.
  9. Let it cool, then refrigerate for at least 4 hours before serving.

Notes

  • For a sweeter cheesecake, add more sugar to taste.
