Tuscan Kale Pesto Pasta

Delicious Tuscan Kale Pesto Pasta combines the vibrant flavors of kale and turkey bacon for a delightful meal.

Ingredients

Scale
  • 8 ounces pasta of choice
  • 1 cup Tuscan kale, chopped
  • 1/2 cup walnuts
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 slices turkey bacon, cooked and chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the pasta according to package instructions.
  2. While the pasta is cooking, make the pesto by blending kale, walnuts, Parmesan, garlic, and olive oil in a food processor.
  3. Drain the pasta, reserving some pasta water, and mix it with the pesto.
  4. Add in the turkey bacon and toss to combine.
  5. If the sauce is too thick, add a bit of reserved pasta water until desired consistency.
  6. Season with salt and pepper to taste.
  7. Serve immediately, garnished with extra Parmesan if desired.
