Vanilla Tiramisu Cake

A delightful twist on the classic tiramisu, featuring layers of vanilla cake, creamy mascarpone, and espresso.

  • 1 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup brewed espresso, cooled
  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the wet ingredients.
  5. Divide the batter between the prepared pans and bake for 25-30 minutes.
  6. Once baked, let the cakes cool before removing from the pans.
  7. For the filling, whip the heavy cream and mascarpone until thick and creamy.
  8. Assemble the cake by layering the espresso-soaked cakes with mascarpone filling in between.
  9. Chill in the refrigerator for at least an hour before serving.

Notes

  • For a stronger coffee flavor, use strong espresso and soak the cakes longer.
  • Feel free to add cocoa powder between the layers for additional flavor.
