- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 tablespoon vanilla extract
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup brewed espresso, cooled
- 1 cup mascarpone cheese
- 1/2 cup heavy cream
- Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the wet ingredients.
- Divide the batter between the prepared pans and bake for 25-30 minutes.
- Once baked, let the cakes cool before removing from the pans.
- For the filling, whip the heavy cream and mascarpone until thick and creamy.
- Assemble the cake by layering the espresso-soaked cakes with mascarpone filling in between.
- Chill in the refrigerator for at least an hour before serving.
Notes
- For a stronger coffee flavor, use strong espresso and soak the cakes longer.
- Feel free to add cocoa powder between the layers for additional flavor.
