  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 1/4 cup melted butter
  • 16 oz low-fat cream cheese
  • 1/2 cup low-fat Greek yogurt
  • 1/2 cup sugar substitute
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter.
  3. Press the mixture into the bottom of cupcake liners in a muffin tin.
  4. In another bowl, beat cream cheese, yogurt, and sugar substitute until smooth.
  5. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  6. Pour the cheesecake mixture over the crusts in the muffin tin.
  7. Bake for 20 minutes or until set. Allow to cool and refrigerate for at least 2 hours before serving.
