- 1 cup graham cracker crumbs
- 2 tablespoons sugar
- 1/4 cup melted butter
- 16 oz low-fat cream cheese
- 1/2 cup low-fat Greek yogurt
- 1/2 cup sugar substitute
- 2 eggs
- 1 teaspoon vanilla extract
- Preheat the oven to 325°F (163°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter.
- Press the mixture into the bottom of cupcake liners in a muffin tin.
- In another bowl, beat cream cheese, yogurt, and sugar substitute until smooth.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Pour the cheesecake mixture over the crusts in the muffin tin.
- Bake for 20 minutes or until set. Allow to cool and refrigerate for at least 2 hours before serving.
