Zucchini Lasagna

A delicious and healthy twist on traditional lasagna made with zucchini and turkey bacon.

  • 3 medium zucchini
  • 1 pound turkey bacon
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup marinara sauce
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchini lengthwise into thin strips.
  3. In a skillet, cook turkey bacon until crispy, then chop.
  4. In a bowl, mix ricotta cheese, egg, garlic powder, Italian seasoning, salt, and pepper.
  5. Layer in a baking dish: zucchini strips, ricotta mixture, bacon, and marinara sauce. Repeat layers.
  6. Top with mozzarella cheese.
  7. Bake for 30-35 minutes until cheese is melted and bubbly.
  8. Let cool for 10 minutes before serving.

Notes

  • For a vegetarian option, substitute turkey bacon with sautéed vegetables.
  • Make sure to salt the zucchini strips to remove excess moisture before layering.
